a couple of imporant changes, i make it in a baking pan, not the individual things the recipe instructs, and i incorporate the bechamel sauce into the filling.
- all of the herbs go into the bechamel to steep while it is cooking and thickening.
- i omitt the mushrooms and add more spinach.
- i substitue queso blanco or queso fresco for the parmesan cheese, this is a purely personal taste thing.
- i add a couple of shredded carrots to the filling for color.
after i mix it all together, i layer 6 sheets of philo dough (brushed in between with butter) and then a layer of filling. i repeat this once and top with 6 more sheets and then sprinkle sesame seeds on the top sheet. then i bake it in a 350 degree oven for about 30 minutes. you should let it cool a bit and set up before you cut and serve it.
i just looked at the whole recipe yesterday (i usually just look at the ingredients) and noticed it made the individual pies, so i figured i'd share how i make it.
